Grilled zucchini polenta



Amazing textures and flavours create a memorable experience from this meal, which is also packed with nutritional goodness.


What do you need:

1 tbsp butter

3 tbsp olive oil

250g grated zucchini

3 cups or 750ml vegetable bouillon (made from hot water and dry bouillon)

185g polenta

salt and black pepper to taste

2 tbsp grated parmesan

fresh thyme

pinch of ground coriander

pinch of chilli flakes (optional)

fresh thyme (optional)


Side:

Cherry tomatoes, cut in halves dried oregano dried black pepper oilive oil To prepare the tomatoes, you can opt for either slowly roasted in the oven for about 30 - 40 min or grill them with the polenta on the grill. Toss them well with the olive oil, oregano and black pepper and roast or grill until soft and the skin is blistering. Don't over blacken them. Tomatoes nutritional powers enchance when they are cooked. How to make the polenta:

Heat the butter and 1 tbsp of oil in a large pan. Shalow fry zucchini on medium heat for 3 - 4 min, until softened but not browned, stir frequently. Remove from heat and set aside. Bring stock (made of dry bouillon and hot water) to boil in a large pan. Sprinkel in polenta, adding it slowly and constantly stir with wooden spoon to prevent it from clumping. After about 5 min when the polenta begins to come away from the sides of the pan, remove from the heat. Add the spices and herbs, mix in the zucchini and turn the polenta mix into a greased roasting pan. Spread evenly, sprinkle parmasan cheese and leave for at least 1 hour to set and cool. The longer you leave it the firmer it will hold. Heat the grill / cast iron ridged grill pan. Cut polenta into slices, brush with remaining oil and cook for 2 - 4 min on each side, until golden. Serve with the grilled / roasted cherry tomatoes on the side. Nutritional information: Corn is a power house for energy production.
