For the Ciello Bianco, organic Catarratto grapes are harvested from small plots across Sicily's southern shoreline. The vineyards are planted south-facing on sunny hillsides - the ideal environment for this variety. The juice is fermented with wild yeasts and aged in steel before bottling, unrefined, unfiltered and with minimal sulphite. Notes of lemon juice, melon and pink grapefruit. It’s unlike most Sicilian Catarratto you'll try - it boasts an oily texture and a unique gooseberry tang whilst remaining enjoyably drinkable.
